Because apples contain a high amount of pectin, you needn’t add any when making apple jellies (as is the case with most other fruits). I’m always on the lookout for close approximations of the texture of the Sunkist Fruit Gems, and now I’ve found my weekend plans to make my own. This plan will become xtra-cutesy if I can find a small cookie cutter in the shape of an apple.
